Smoky, tangy, and a little sweet, chipotle mayo that does more than plain mayo ever could. Works as a spread, a dressing, or a sauce.
Ingredients
- 400 ml (1¾ cups) mayonnaise
- 3 tsp lime juice
- 3½ tbsp chipotle puree
- 1½ tbsp agave syrup
- salt and pepper, to taste
Instructions
- 1
Combine all ingredients in a large bowl.
- 2
Whisk or stir until fully incorporated and smooth.
- 3
Taste and season with salt and pepper.
- 4
Transfer to squeeze bottles or a sealed container.
Cook's Note
Taste before adding salt, the mayo and chipotle both carry salt. You may not need much or any. Adjust the agave if it tastes too sharp from the lime.
Best Served With
As a spread for burritos and tortas, a dressing for fish tacos and slaw, or a dipping sauce for fries and tostadas.
Why This Recipe Works
Agave and lime balance each other, the sweetness softens the citrus and the lime stops the agave from being cloying. Chipotle puree folded into mayo keeps its smoky flavor distributed evenly without any blending.
Make It Yours
- Add a teaspoon of smoked paprika for more color and smokiness
- Swap agave for honey for a slightly different sweetness
- Add a touch of garlic powder for more depth
- Reduce the chipotle by half for a milder version
Leftover Strategy
Keeps refrigerated for 2 weeks in a sealed container. Stir before use, the chipotle can settle.
